HACCP / SFBB Hand Hygiene Training

360 degree Hygiene Defence Framework
To give your business complete, unbreakable protection, we address the two core pillars of any successful food safety program: your people and their workplace. We call this unified approach the 360-Degree Hygiene Defence.  Here is how the two halves work hand-in-glove:

  • Pillar 1:  The Human Factor (Personal Hand-Hygiene Mastery): Here we use UV GERM™ training lotions and gels paired with the SHOWBOX PRO™ visual training booth. Staff apply the lotion, wash their hands as normal, and place them inside the booth under safe UV light. Any missed spots instantly glow a brilliant, fluorescent green. This visual self-correction completely bypasses language and literacy barriers on multilingual shift lines, building automatic muscle memory for correct hand scrubbing and glove handling.
  • Pillar 2:  The Surface Factor (Environmental Surface Verification):  Here we deploy CHECKPOINT™ UV Tracers designed to physically mimic real-world food soils like starch powders, sticky gels, liquid oils, and heavy greases on your machinery and touchpoints. Quality supervisors apply an invisible “secret” mark before a clean-up shift. If a spot is skipped, it glows unmissably under a calibrated 365 nm UV-A torch. This enforces an unyielding 0.0% Zero-Glow Standard—if it glows, it must be re-cleaned.
By pairing interactive personal hygiene training with rapid, low-cost visual surface audits, you eliminate standard cleaning guesswork, prevent cross-contamination and establish a bulletproof, audit-ready compliance culture. It moves your team from reactive “tick-box” cleaning to a shared standard of professional pride.

SHOWBOX PRO™ is an interactive visual hygiene assessment unit: Visual Hygiene Training (VHT). It uses UV-A illumination (365nm) inside an enclosed, shaded viewing chamber.

When staff apply cosmetic-grade fluorescent training lotion (e.g. UV GERM Lotion) and proceed to wash their hands or practice glove changes, any missed areas glow brightly inside the SHOWBOX PRO.

This provides objective, immediate visual evidence of poor technique, breaking incorrect muscle-memory habits and overcoming language barriers without relying solely on theory.

Under HACCP Principle 6 (Verification Procedures) and SFBB (Safer Food, Better Business) Management / Staff Training pillars, food business operators must prove that prerequisite hygiene procedures are effective. While ATP swabs and micro-testing audit surfaces, the SHOWBOX PRO system verifies personnel competency.

It provides a measurable, audit-ready training verification loop showing Environmental Health Officers (EHOs) and BRCGS auditors that staff have demonstrated practical competence in preventing cross-contamination.

Induction / Onboarding:  All new food handlers prior to their first active production shift.

  • Refresher Frequency: Every 6 to 12 months for standard factory or kitchen personnel.

  • Triggered Training: Immediately following an internal audit failure, an EHO non-conformance flag, or an internal cross-contamination event.

  • High-Care / High-Risk Line Transitions: Prior to staff moving from low-risk/raw handling into ready-to-eat (RTE) or allergen-managed cells.

In alignment with strict Good Manufacturing Practice (GMP) and Sanitation Standard Operating Procedures (SSOPs), the pass standard is 0.0% residual visible fluorescence across all skin surfaces under UV light inspection.

Any visible glowing residue (whether on fingertips, webbings, palms, or wrists) constitutes a failed clean-down, requiring immediate root-cause correction and targeted re-cleansing before line clearance.

In over 80% of baseline drills, food operatives routinely miss:

    1. Fingertips, nail beds, and subungual zones.

    2. Webbing between fingers and the thumb crotch.

    3. The backs of the hands.

    4. Wrists and forearms up to the apron/sleeve line.

The training reinforces the statutory 6-step handwashing technique (minimum 20 seconds scrub):

  1. Wet hands under clean, warm running water.

  2. Apply antibacterial/sanitising soap to cover all hand surfaces.

  3. Rub palm to palm, then right palm over left dorsum with interlaced fingers, and vice versa.

  4. Interlace fingers palm to palm, then rub backs of fingers to opposing palms with fingers interlocked.

  5. Rotational rubbing of thumbs clasped in opposing palms.

  6. Rotational rubbing of fingertips in palms, extending down to wrists, followed by a thorough warm-water rinse and complete drying with single-use paper towels.

Bacteria, viruses, and residual tracer media transfer up to 500 times more rapidly from wet or damp skin onto equipment and food contact surfaces than from completely dry skin. Showbox Pro drills highlight that leaving hands damp results in instant cross-contamination onto aprons, handles, and packaging materials.

Yes. Trainees quickly see under UV illumination that rings, wristwatches, bracelets, chipped polish, and artificial nails trap massive fluorescent deposits that cannot be removed by routine washing. The system visually enforces site rules prohibiting jewellery (except plain wedding bands) and artificial nails, while illustrating why cuts must be covered with blue, metal-detectable waterproof plasters.

Using UV Hand-Rub Training Gel, trainers simulate hand disinfectant application. Rather than washing it off, staff rub the gel until dry using the WHO/HACCP hand-rub rub protocol. The hands are placed immediately into the Showbox:

  • Pass Standard: 100% complete, uniform fluorescent coverage over every millimeter of skin, nails, and wrists.

  • Failure Indicator: Any dark (non-glowing) skin patches indicate dry “missed zones” where pathogens would survive.

No. Hand sanitisers are designed to decontaminate physically clean hands, not to clean soiled hands. Showbox drills clearly demonstrate that alcohol rubs applied over heavy food residues (grease, flour, protein soils) fail to penetrate organic soils. Hand rubs must be used as a post-wash sanitising barrier, not as a shortcut.

Operatives must apply a sufficient volume of rub (typically 3–5 ml) and rub vigorously for at least 20 to 30 seconds until hands are completely dry. Handling food, packaging, or donning gloves while sanitiser is still wet can cause product tainting and breaks the physical barrier properties of PPE gloves.

Before donning clean PPE gloves, the operative’s hands are lightly coated with UV tracer lotion. As they handle the clean gloves out of the dispenser box and pull them onto their hands:

  • The outside of the gloves is inspected under the Showbox UV light.

  • If fluorescent smudges appear on the glove exterior, it proves that poor hand preparation or improper cuff-handling contaminates sterile gloves before work even begins.

1. Thoroughly wash and dry hands (or apply hand rub until bone dry).

2. Take a glove from the dispenser touching only the rolled bead/cuff edge.

3. Pull the glove over the hand without touching the fingers or palm of the glove.

4. Take the second glove by the cuff with the gloved hand and pull it on.

5. Inspect to ensure no rips, punctures, or roll-down over sleeves.

Using the “glove-in-glove / beak technique” to prevent soiled exterior surfaces from touching bare skin:

  1. Pinch & Peel: Pinch the outside edge of one glove near the wrist, peel it downwards away from the wrist, turning it inside-out into a ball in the palm of the remaining gloved hand.

  2. Slide Under: Slide un-gloved fingers cleanly underneath the cuff of the remaining glove without touching the outer contaminated surface.

  3. Peel Off: Peel the second glove forward over the first glove, creating an inside-out pouch containing both gloves.

  4. Dispose & Inspect: Discard into a dedicated bin. Staff then place bare hands into the Showbox Pro to verify zero tracer was transferred during removal.

Gloves can develop microscopic tears, micro-pinholes, or become compromised by warm sweat inside the glove matrix. Warm, moist environments inside gloves encourage rapid bacterial proliferation on skin. Showbox Pro VHT training demonstrates that when gloves are removed, hands carry elevated bio-loads that must be washed immediately.

Gloves must be discarded, hands washed, and fresh gloves donned:

  • Immediately upon puncturing, tearing, or physical degradation.

  • Between handling raw ingredients (meat, poultry, allergens) and cooked/RTE foods.

  • After touching non-food contact points (door handles, waste bins, floor drains, clothes, hair, touch screens).

  • After a maximum continuous wear time (typically every 60–120 minutes) to prevent bacterial incubation.

Yes. Products such as UV GERM Training Lotion and Gel are cosmetic-grade, skin-dermatologically certified, non-toxic, and 100% allergen-free (conforming to UK Food Information Regulations and EU No 1169/2011 Annex II — free from gluten, dairy, nuts, soy, egg, and sesame). They do not stain skin or damage 304/316 food-grade stainless steel when cleaned off.

No. All training exercises involving UV tracer lotions, gels, or powders must take place in designated non-food zones—such as staff training rooms, break rooms, or primary hygiene barrier airlocks/changing rooms. No training chemicals should ever be opened over active commercial food preparation lines.

Every training session must be recorded in an audit-ready training log capturing:

  • Date, time, and trainer ID.

  • Trainee name and department.

  • Specific module: Handwash drill, hand-rub application, or glove donning/doffing.

  • Result (Pass/Fail): Baseline 0.0% fluorescence check.

  • CAPA (Corrective and Preventive Action): Specific blind spots identified and corrective washdown repetitions completed before sign-off.

They form a 360-Degree HACCP Hygiene Verification Circle:

  • SHOWBOX PRO™ validates the personnel domain (handwashing technique, sanitiser rubbing, glove handling).

  • CHECKPOINT™ UV Tracers (Gels, Sprays, Powders, Markers, Greases) validate the facility domain (machinery cleaning, cleaning dwell times, high-touch environmental control points).

Together, they close-the-loop on all human and environmental cross-contamination vectors across the entire plant, providing a 360° Hygiene Defence Framework.
